Sweet as Honey

Through one of my recent rotations I was lucky enough to experience a Farm to table source show. While I was there, I was able to learn about the current initiatives being taken to help increase the opportunity for the presence of more nutritious and local foods within the school cafeterias. Many leaders within the agricultural and education sectors were present with exciting products and information to share.


One local farmer that caught my attention was from a honey farm. He shared many interesting facts with me about the benefits of honey both in cooking and in health. For example, using honey when cooking enhances browning and crispness. It’s a great ingredient to use for glazing roasted vegetables, and other baked goods. It is a flavor enhancer and natural sweetener, great for hot teas, and cold beverages. Honey retains moisture, making it a good ingredient choice for providing moisture in rich cakes, and it adds a beautiful golden hue to sauces, dressings, jellies, and desserts.


As mentioned previously, honey has many health benefits as well. Honey has been shown to help relieve coughs. Its thick consistency helps coat the throat while the sweet taste is believed to trigger nerve endings that protect the throat from coughing. Honey may be beneficial as a sleep aid as well. Honey’s sweetness causes a rise in insulin which releases serotonin. Our bodies convert serotonin to melatonin, a chemical compound that regulates the length and quality of sleep. Honey Smoothie


Ingredients
1 cup almond milk
1 banana
2 Tbsp almond butter
1 Tbsp honey


Directions
Combine all ingredients in a blender.
Blend until smooth
Enjoy!
